The Sambuco Tradition

The elderflower (fiori di sambuco, the creamy-white umbrella flower clusters of Sambucus nigra, harvested in late May-early June when fully open and before the petals begin to drop) is used in the Sambuci area in the traditional Roman-Lazio preparations: fried in batter (the fiori di sambuco fritti, the flower clusters dipped in a light batter of flour, egg white, and mineral water, fried in hot oil, dusted with sugar, one of the most specific spring fritti of the Lazio kitchen). The Village Circuit

The Sambuci village walk (the main piazza → church of San Sebastiano → the belvedere (panoramic viewpoint) terrace on the south side of the village → return via the northern lane) takes approximately 30-40 minutes.
